Prep: 15 min
Marinate: 10 min
Total: 25 min
Serves: 4 as a starter
Difficulty: Easy
Ingredients
- 500 g fresh kingfish (or prawns, mahi mahi, snapper, etc.), diced
- ½ ripe mango, diced
- ¼ red onion, finely diced
- ½ red chilli, finely diced
- ½ avocado, diced
- 1 small handful coriander, finely sliced
- Juice of 2½ limes
- 1 tbsp fish sauce
- ½ tsp Tabasco
- 50 ml coconut milk
- Salt & pepper, to taste
- Extra virgin olive oil, to finish
Method
- Cut the kingfish into small dice. If you prefer the fish more “cooked”, place it in a bowl with the lime juice while you prepare the remaining ingredients.
- Add the diced mango, red onion, chilli, avocado, coriander, fish sauce, Tabasco and coconut milk. Season with salt and pepper.
- Gently mix until everything is evenly combined. Let it marinate for 10 minutes.
- Taste and adjust seasoning if needed. Drizzle with a little extra virgin olive oil and serve immediately with corn chips, tortilla chips or fried rice paper / wonton wrappers.
Tips
- Use the freshest fish you can find.
- Ripe but firm mango works best.
- For milder heat, remove the chilli seeds.
- Keep everything cold and serve straight away.
